This is just fizzy water. |

Gomme Syrup
A syrup made from sugar and water. |

Fresh Mint
Leaves from mint plant. |

Gently crush the mint in the bottom of the glass. Put the lime juice, gomme syrup, white rum and bitters in a shaker with ice. Strain into the glass and top up with soda water.
